2007 Semillon, Dry Creek Valley - Philip Staley Vineyards & Winery
Semillon is a varietal used in the white wines of Bordeaux and provides the base for the finest Sauternes in the world. In California, Semillon is occasionally used to provide some richness in Sauvignon Blanc, but rarely bottled on its own. Phil Staley loves to take on unusual varietals, and with this Semillon he has produced a wine with a pretty nose of honeydew and key lime pie. On the palate the wine has zippy acidity perfectly suited to deep-fried oysters or grilled halibut with a lemon beurre blanc.
