2009 Cass Wines Roussanne, Paso Robles
Unlike most white wines, Roussanne ripens slowly and is often picked late in the harvest season. We decided to ferment in stainless steel in order to bring out the varietal character. The wine has intense citrus flavors and crisp acidity. Drink this wine with hearty salads, fish, Asian foods and grilled white meats.

Cass Winery-2009 Viognier, Paso Robles
This Estate Viognier was fermented and stored in stainless steel resulting in a wine expressing varietal flavors. We hand picked at first light in order to get the grapes as cold as possible into the winery. Lood pressed the juice off the skins right way, settling the wine clean. Fermentation was started soon after with a South African yeast isolate. Malolactic fermentation was blocked. The resulting wine is a fresh new world style. Pair this wine with crispy and hot crab cakes and a light salad.

This Rose is a blend of Grenache and Syrah. Off-dry with aromas of watermelon. On the palate, flavors of strawberry shortcake and cinnamon.

Cass Winery-2008 Grenache, Paso Robles
This Estate Grenache was cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and fermented in our winery. Grenache is often blended with another grape because the tannins in Grenache are naturally very low, consequently, or so the story goes, Grenache does not age well. We bottled 100 cases of 100% Grenache in 2004 and have been very happy with how it stood up to time. We love the flavors of Grenache, by itself. The delicate personality of Grenache is easily overpowered by blending wines. Consequently we went back to an unblended Grenache. Think of it as a hearty Pinot, with lots of strawberry notes.

Cass Winery- 2006 Petite Sirah, Paso Robles
Fermentation was completed in 5 ton open top fermenters which were punched down by hand twice per day and pumped over 1-5 times per day until fully dry. We barrel aged this wine for 23 months. Petite Sirah is a big wine usually reserved for blending with wines that need a bit more backbone. We felt upon tasting, that the tannins had been softened enough by the hot days we get on this side of Paso Robles that it was a wine that could appeal to wine drinkers who favor big, full bodied wines. Drink this wine with Standing Rib Roast of Beef, Crusty pan seared Rib-eye steak, or Glazed Beef with Bourbon-Roquefort sauce.

Cass Winery-2006 Cabernet Franc, Paso Robles
Cabernet Franc, usually used for blending, is a consistent perfomer in our vineyard. Because of its distinct character and gentle tannins we have decided to make it into a pure varietal wine. Hints of fresh pencil shavings, unsmoked cigars and macerated cherries on the nose. Try it with upside down tomato beef pie.
